Methods
Processing is selected based on the lot and the intended roasting application. The method used has a direct impact on flavour profile, body, and roasting behaviour.

Washed (Wet Processed)
Cherries are depulped and fermented to remove mucilage before drying. The result is a clean, defined cup with bright acidity preferred for specialty roasting.
